This is the simplest way to make buttercream. There are professional methods but this is the easy version that is just as delicious.
Ingredients:
100g softened butter
300g icing sugar (confectioners sugar)
1 1/2 Tbs. coffee powder (dissolved in 1 1/2 tsp hot water, leave to cool)
Method:
- Sift the icing sugar through a sieve for a silky smooth result in the buttercream.
- Cream the sugar and butter together and whisk until it lightens in colour…
- …only to get dark again when you pour in the coffee. Pour in the coffee.
- Whisk until smoothily combined. It should hold up shape when you hold the whisk up. If it’s still gloopy, add more icing sugar.
I cannot stress this enough, don’t put the butter in the microwave for even five seconds to attempt to “soften” it faster. It will not work. Trust me. I made that mistake before attending culinary school. Plan a day ahead if you want to bake something, and leave the butter out overnight.
